Taste This! The Delicious Sequel

Back in 2009, I was honored to review the cookbook Taste This! by author, blogger and friend Gina von Esmarch. (Gina hails from a foodie family best known for the famous Alioto’s at #8 Fisherman’s Wharf in San Francisco.) While my favorite way to experience Gina’s food is sitting in her dining room and eating until I am stuffed… trying a recipe from her newest cookbook Taste This! The Delicious Sequel is not too shabby either.

This weekend, a group of bloggers rallied to enjoy a “Cyber Dinner” where we each prepared a course and then shared our experience on our blogs. When I first wrote about Taste This!, I chose to write about an appetizer since I believe the first course sets the tone and mood for the entire meal. For the Cyber Dinner, I decided to serve-up the dessert, which (if done correctly) seals the deal for the meal. I flipped through the cookbook and quickly decided on “The Memphis King’s Cupcakes” (banana cupcakes with peanut butter frosting!)

These tasty cupcakes, found on page 100 of the cookbook, were a perfect ending to our family-friendly BBQ. The cupcakes are not overly sweet, and have a beautifully subtle banana flavor. The literal icing on the cake is the amazing peanut butter and cream cheese frosting, which would make The King himself happy.

    This is an incredibly easy dessert and soooo yummy! Great for balmy summer evenings with a nice scoop of vanilla icecream! The secret incredient is balsamic vinegar.

    3 cups fresh fruit (berries work well. my favorite is a combo of raspberries and blackberries. peaches are nice too)
    2 tbsp balsamic vinegar
    10 tbsp sugar
    1 cup flour
    1/4 cup oatmeal
    1/2 cup (1 stick) unsalted butter, cut up
    pinch of salt

    preheat oven to 400. in glass or ceramic bowl, toss fruit with balsamic vinegar and 4 tbsp suger. Let stand for 30 mins.
    In food processor, pulse together remaining 6 tbsp sugar, flour, oatmeal, butter, salt until mixture resembles fine bread crumbs.

    Pour fruit mixture in a greased square glass baking dish (approx. 8X8). Sprinke crumble mixture over fruit. Shake slightly to allow ingredients to settle. Bake until the top is golden, about 30 mins. Serve with vanilla ice cream.

    When I double the recipe I use a 9X11 baking dish. Also you can easily make this ahead of time, then throw in the oven to cook. A crowd pleaser for sure!

    I like to have Magnolia Ice Cream Mango Flavor after a bbq or a french silk pie. mmmmmm….PIE….

    Those cupcakes do sound delicious! Our family favorite is definitely s’mores. The princesses may have gotten us hooked, but now we all look forward to roasting up this sweet treat. There are so many amazing marshmallow varieties/flavors out there to make them even more delicious than what I remember from my childhood camping days — I especially love thesein caramel swirl: http://www.plushpuffs.com.
